Country Cooking from a Redneck Kitchen by Francine Bryson and Ann Vokwein is my kind of cookbook. It is full country cooking and being from the south we love country cooking here. Many of the recipes I am familiar with but there are some that are new to me and I can’t wait to try them out.Some of the categories are: Redneck Whatnots (dips and salads mostly), Yardbird (for all of you who don’t have a clue that’s chicken), Enough to feed a crowd (living in the Bible Belt we have a lot of after church dinners), Sides, ‘taters & ‘Maters among others. There are 234 pages of recipes but I didn’t count the number of actual recipes. The food is beautifully photographed although not all recipes have a photo.I love cornbread salad and the recipe in this book looks wonderful. There are so many recipes I could never list them all but a few that I can’t wait to try: Bacon and Cheese Stuffed Burgers, Blue Cheese Spicy BBQ Burgers, Chicken Casserole, and surely can’t forget the desserts Brown Sugar Pie, and Oreo Brownies. I’m personally not a big fan of fried green tomatoes but there is a recipe in it for them and if you are looking for something to do with those green tomatoes fresh out of the garden many people love them.If you are looking for a vegetarian cookbook you may want to stay away from this one. And I would say that if you are looking for low-fat this one isn’t for you. But if you are looking for some good southern comfort food grab it quickly. I wouldn’t suggest eating out of it every day but some indulgence is good for the soul. I believe this is one of my new favorite cookbooks and I will be using it frequently.I received this cookbook at no charge from [...] in exchange for an honest review.
I preordered this because of a great newspaper review-and the paper was right!! Normally, I'll just skim through a new cookbook, but with this one I started reading through the recipes right away. The pork chops and potato recipe is the first one I'm going to try. Or maybe the ckicken and dumpling recipe---FINALLY found a a hand rolled dumpling recipe that sounds like what my husband's granny used to make. There is an unusual squirrel recipe that I know I'll NEVER try, especially since the day my husband brought home squirrels and put them in the freezer with the eyes staring out at me, just no, no way. But I will definitely try Aunt Fanny's Buttermilk Pie recipe and compare it to the recipe I use after experimenting with innumerable recipes in search of the best taste. Chicken pot pie that sounds exactly like a recipe another of my husband's relatives made, group meals, oh, I'm going to be cooking up a storm with this one. I like how she tells you what brand of a product she uses in a recipe, and gives great directions. A lot of the recipes don't require you to go out and restock your pantry or buy exotic ingredients you'll never use again, which I really appreciate. I may even try my hand at bread and rolls again. Great addition to my cookbook library.
Wow. This is a great book. I am trying to take one cookbook and try new recipes, and the first one I have tried is the Pork Chop Casserole on Page 76. My husband loves mushrooms, not my favorite, but I tried it anyway. Oh my gosh, you need to try this recipes. The pork chops are layered on top of the potatoes, and then you make a mushroom cream sauce and cover it and cook it. And I can't tell you how good this is, because there are no words. I don't even like mushrooms that much, and I even liked it.I am looking forward to making all the other Southern dishes,
Love this book. I bought it months ago and have made at least 12 recipes from it and been very pleased with them all. Can't wait for Franchise's next book!
